New York Cheesecake

Ingredients
1 lb Ricotta Cheese
½ lb Cream Cheese
¾ lb Caster Sugar
4 large eggs
¾ oz Cornflour
¾ oz Plain flour
2 tablespoons freshly squeezed lemon juice
½ teaspoon Vanilla Extract
2 oz butter – melted
1 pint of Sour Cream

Method
Prepare a “spring form” baking tin.

In a large bowl beat the ricotta and cream cheese together. Add the sugar and eggs and continue beating. Add the Cornflour and flour, lemon juice and vanilla extract to the mix, then add the melted butter and sour creaming, continue mixing – gently.

This desert should be placed in a cold over. Bake at 160 degrees Celsius for about 90 minutes. Turn the oven off and leave for a further 2 hours.
