Fried Greens with Bacon


Serves: 4

Ingredients
Olive Oil
150g Walnuts
2 shallots, finely chopped
4 slices bacon, chopped
100g Brussell Sprouts, shredded
300g Savoy Cabbage, shredded
200g Spring Greens, chopped
Walnut Oil

Method

  • Heat a little olive oil in a wok or large frying pan and fry walnuts until browned – the remove them to a plate.
  • Fry the shallots and bacon for a couple of minutes, then add the sprouts and fry for another minute or two stirring all the time.
  • Add the cabbage/spring greens and stir fry over a high heat until all greens wilt and are lightly browed.
  • Drizzle with a little walnut oil, season and toss together with the walnuts

You can replace walnuts with Pine Nuts if you wish – equally delicious.
