Glayva Orange Pudding

In the cold months of winter or when I am in need of good old British comfort food when I am feeling a little low there is nothing more wonderful than a sponge pudding. One of my personal favorites is Glayva Orange Pudding, a creation of my mothers who runs Puddy Blog. 3½ oz unrefined golden caster sugar 3½ oz unsalted butter, room temperature 3½ oz self raising flour 2 large eggs 1 blood orange, finely grated zest 1 tsp (or amount to taste) Glayva whisky liqueur (or Grand … [Read more...]

Sticky Toffee Pudding

stickytoffeepudding

There are some occasions, most especially during cold winters, when only a good line-your-ribs style pudding will do. This one, I admit, is a little bit of a cheats version - the  sauce being little more than dulce de leche warmed through. Not traditional, but really wonderful just the same (its also baked) Pudding 175 grams dates (not sugared), stoned and chopped 1 dessert spoon (2 tsp) bicarbonate of soda Boiling water 90 grams unsalted butter 175 grams light muscovado sugar 2 large … [Read more...]

How to make a fruit crumble

Autumn is now upon us and, as such, I have started to crave the foods which were in abundant during these cooling months. In particular rich, hearty and sweet fruit crumbles - packed with all the fruits from our own garden. During the Autumn and Winter months fruit crumbles would feature highly on the menus during my childhood - usually made from the fruits we had stored or preserved. Plums, Apples, and Pears were always popular. Admitedly the pear crumble is a recent creation of my own, but I … [Read more...]

Orange Caramel Pudding

I made these late last night for lunch today. They look absolutely devine, and although not mentioned in the original recipe below I added some lime and lemon zest to the mix. If you chose to make this recipe you may do so or not. I liked the idea, and it makes for a much more attractive pudding. Ingredients :: 3½ oz unrefined caster sugar 9 fl oz freshly squeezed orange juice 1 fl oz freshly squeezed Lime Juice 3 large eggs, beaten Method:: Preheat the oven to 180 degrees … [Read more...]

Traditional Christmas Pudding

christmas-pudding

We would always have a traditional homemade christmas pudding at christmas - served with cream, custard or my personal favourite rum sauce. The pudding would always have been made a few weeks in advance and left to mature, and I do believe to this day that the almost daily brushing of alcohol is what made it so very special. I personally do not take well this tradition of setting fire to the pudding just before serving - yes, it looks impressive. But it always leaves a bitter taste to the … [Read more...]

Vegan Rice Pudding

I absolutely adore rice pudding so when I went through a period of veganism (currently debating whether to return at the present moment in time) I invented this vegan alternative using rice or soya milk. Back in the UK I always preferred the flavour of rice milk to Soya - but Spain has the most delightful soya milk drink sweetened with brown sugar - it means I have to use less sugar in the mix and it is truly wonderful - vegan or not I am sure you will enjoy this healthier rice … [Read more...]
